INGREDIENTS

  • 6 oz Chicken Thigh, boneless, with skin
  • 0 1/2 sweetpotato, 5" long Sweetpotato, fresh
  • 4 tsp Ghee
  • 0 1/4 tsp Salt
  • 0 1/4 tsp Black Pepper, ground
  • 1 cup Red Cabbage, steamed, shredded
  • 0 1/4 tsp cider vinegar USDA
  • 0 1/8 teaspoon Cayenne pepper
  • 0 1/16 teaspoon (3.5g) truvia
  • 0 1/16 tsp Chili powder
  • 0 1/16 tsp Garlic Powder
  • 0 1/16 tsp Paprika

DIRECTIONS

  1. Preheat air fryer to 375°F for at least 3 minutes. Season both sides of the chicken thigh with salt and pepper, and cook skin side down in the air fryer alone for 12 minutes.
  2. While the chicken begins to cook, cut the sweet potato into ½-inch julienne, or French fry shape. Toss with 1 tablespoon melted ghee, 1/8 teaspoon salt and 1/8 teaspoon pepper.
  3. When the chicken has reached the 12 minute mark, turn it over and add the sweet potato fries to the air fryer in a single layer. Continue to cook for 5 minutes.
  4. While the sweet potatoes and chicken cook, slice two 1-inch thick “steaks” from the cabbage. Spread each side of each cabbage slice with ½ teaspoon ghee and season with a pinch of salt and pepper. After 5 minutes of cooking the sweet potatoes and chicken, shake the fryer basket to toss the sweet potatoes, and add the cabbage on top of the chicken and sweet potatoes. Cook all the components for another 8 minutes.
  5. While the cooking completes, combine the vinegar with 1 teaspoon ghee, cayenne, stevia and erythritol sweetener, chili powder, garlic, and paprika in a small bowl. This recipe gives a medium level of spice. If you prefer your chicken more spicy, you can double the amount of cayenne.
  6. Remove the cabbage and sweet potatoes from the air fryer to a plate. Check the chicken for doneness using an instant read thermometer to ensure an internal temperature of 165°. Remove the fully cooked chicken from the air fryer and spread each side of the chicken with half of the spicy oil.
