INGREDIENTS

  • 6 medium (4-1/8" long) Scallions or Spring Onions
  • 2 clove Garlic
  • 2 1/2 pepper Red Hot Chili Peppers
  • 0 1/4 cup Canola Vegetable Oil
  • 1 fl oz Fresh Lime Juice
  • 0 1/4 cup Canola Vegetable Oil
  • 2 tbsp Allspice Ground
  • 4 tsp Dry Mustard
  • 2 tsp Salt
  • 2 teaspoon Sucralose Based Sweetener (Sugar Substitute)
  • 1 tsp Cinnamon
  • 32 oz, boneless, cooked Chicken Breast

DIRECTIONS

  1. Combine scallions, garlic, peppers, oil, lime juice, allspice, mustard, salt, sugar substitute, and cinnamon in a food processor or blender; purée. Transfer to a resealable plastic bag or glass baking dish; add chicken and turn to coat. Refrigerate at least 4 hours and preferably overnight, turning once.
  2. Heat oven to 450°F.
  3. Line a baking sheet with foil. Remove chicken from marinade, letting excess drain off; transfer to baking sheet. Bake until just cooked through, 30-40 minutes. Serve immediately.
