INGREDIENTS

  • 2 1/2pepperRed Hot Chili Peppers
  • 0 1/4cupCanola Vegetable Oil
  • 2tbspAllspice Ground
  • 1tspCINNAMON Sugar 'N Spice, Inc.
  • 2tspSALT Morton Salt, Inc.
  • 6medium (4-1/8" long)Scallions or Spring Onions
  • 2cloveGARLIC Iberia Foods Corporation
  • 1fl ozFresh Lime Juice
  • 32oz, boneless, cookedCHICKEN BREAST Tony Downs Foods Co
  • 2teaspoonSucralose Based Sweetener (Sugar Substitute)
  • 0 1/4cupCanola Vegetable Oil
  • 4tspDry Mustard

DIRECTIONS

  1. Combine scallions, garlic, peppers, oil, lime juice, allspice, mustard, salt, sugar substitute, and cinnamon in a food processor or blender; purée. Transfer to a resealable plastic bag or glass baking dish; add chicken and turn to coat. Refrigerate at least 4 hours and preferably overnight, turning once.
  2. Heat oven to 450°F.
  3. Line a baking sheet with foil. Remove chicken from marinade, letting excess drain off; transfer to baking sheet. Bake until just cooked through, 30-40 minutes. Serve immediately.
