calculator Calculating Net Atkins Count™

  • 1 envelope Gelatin, unsweetened
  • 2 tablespoon Tap Water
  • 1 1/2 cup Heavy Cream, liquid
  • 1 each Atkins Café Caramel Shake
  • 3 tablespoon Confectioners (powdered) erythritol
  • 5 drop Liquid Stevia Drops
  • 1 tsp Vanilla Extract

Ingredient note: We recommend using English Toffee flavored liquid stevia drops for this recipe.
  1. In a cup, sprinkle the gelatin onto the water and set aside.
  2. In a small saucepan, whisk together the cream, shake, sweeteners and vanilla. Warm over medium heat, stirring occasionally, until just starting to simmer, about 10 minutes.
  3. Remove from heat, and whisk in the gelatin until dissolved. Fill 6 ramekins with ½ cup of the liquid, cover with plastic wrap, and refrigerate for at least 3 hours or until the gelatin is set. OPTONAL: serve with a dollop of whipped cream (1 tablespoon adds .021 net carbs), or a teaspoon of sugar free caramel syrup (does not add net carbs).
Variations: We developed this recipe using the Café Caramel shake, but you could substitute any other shake for a wealth of flavor options.

Cooking Tip

How we calculate the Net Atkins Count™

In the Atkins Nutritional Approach®, the Net Atkins Count™ is calculated by subtracting the number of grams of fiber and polyols (such as glycerin and sugar alcohols) from the total grams of carbohydrates in whole foods. This reflects the idea that fiber and polyols minimally impacts blood sugar levels at the doses present in the products.
