calculator Calculating Net Atkins Count™

  • 2 cup zucchini noodles
  • 10 each Cherry or Grape Tomato
  • 1/4 cup Green Bell Pepper (chopped)
  • 1/4 cup Red Bell Pepper (chopped)
  • 1/4 cup Red Onion (chopped)
  • 16 each Kalamata Olives
  • 1/4 cup, crumbled Feta Cheese
  • 1 serving Basil Pesto

Ingredient notes:  You will need ¼ cup of Atkins recipe for basil pesto, or you can use a premade pesto with no more than 2 net carbs for ¼ cup. We suggest using 2-inch long zucchini ribbons, or wavy ribbons, for this recipe. Optionally, sprinkle with 2 tablespoons pine nuts for an extra 0.4 net carbs per serving.
  1. Fold together all ingredients in a medium bowl until evenly distributed and coated with pesto.
Kid friendly variation: Use 16 large black olives and 1-ounce mozzarella cheese instead of the Kalamata olives and feta cheese, and subtract 0.7 Net Carbs per serving.

Cooking Tip

How we calculate the Net Atkins Count™

In the Atkins Nutritional Approach®, the Net Atkins Count™ is calculated by subtracting the number of grams of fiber and polyols (such as glycerin and sugar alcohols) from the total grams of carbohydrates in whole foods. This reflects the idea that fiber and polyols minimally impacts blood sugar levels at the doses present in the products.
